Mainly sandy marl and sandy loam soil.

100 quintals per hectare.

VINIFICATION

Selected Arneis grapes from our best vineyards are transported to the cellar when correct level of ripeness is reached. Then the grapes follow a traditional white wine-making process. The free-run juice is fermented at controlled temperatures in stainless steel vats with selected yeasts. Sulphur dioxide additions are kept low

TRAINING SYSTEM

Guyot-pruned. Low yield per hectare. Attentive canopy management via green pruning and selective thinning; minimal chemical treatments. Grapes are hand-picked in August or September.

 

AGEING

In steel tanks for 4-5 months at low temperature. After a cold stabilization the wine is bottled.

 

ORGANOLEPTIC CHARACTERISTICS

A still wine with a bright straw-yellow gleam, with delicate notes of hawthorn, acacia, apple and sweet almond. Elegant, soft and fulfilling, with a long finish and with balsamic hints.

 

PAIRINGS

Excellent with starters, light first courses of fish and seafood, with goat cheese and even with “Eggplant Parmigiana”.

 

TEMPERATURE AND STORAGE

The wine should be stored horizontally in a cool (about 15 °C) damp environment, away from direct sunlight.
