Mostly south-facing.

 

SOIL TYPE

Varies according to location, but generally sandy marl with marine microfauna along with marl-layered sand, interspersed with abundant gravel and yellowish-white strata.

 

YIELD

95 quintals per hectare.


VINIFICATION

Selected Cortese grapes from our vineyards are transported to the cellar when the proper level of ripeness is reached. Traditional white winemaking techniques follow a gentle pressing. The free-run juice is fermented at controlled temperatures in stainless steel vats with selected yeasts. Sulphur dioxide additions are kept low.

TRAINING SYSTEM

Guyot-pruned. Low yield per hectare. Attentive canopy management via green pruning and selective thinning; minimal chemical treatments. Grapes are picked in September or October.

 

ORGANOLEPTIC CHARACTERISTICS

A still wine with a pale, straw-yellow gleam, our 100% Cortese proffers delicate flower and fruity sensations with notes of linden blossom and peach. On the palate the wine is subtle, elegant and refined. Crisp and zesty, with a balanced and lingering finish.

 

PAIRINGS

Excellent as an aperitif or as a companion to brunch; with first or second courses of fish and vegetables, poultry or pork, anything soused delicate charcuterie (lardo, sweet prosciutto, cooked salami) and fresh or semi-ripe cheeses (both soft or stretched-curd). A perfect match for Recco-style focaccia.

 

TEMPERATURE AND STORAGE

The wine should be stored horizontally in a cool (about 15 °C) damp environment, away from direct sunlight.
