VINIFICATION
Following careful selection, the grapes are brought into the cellar. A traditional cold white wine vinification follows, partly macerated on skins for about 24 hours, followed by a gentle pressing. The resulting free-run must ferments in steel tanks with selected yeasts at controlled temperatures. Low total sulfites.
TRAINING SYSTEM
Guyot. This low-yield per hectare vineyard is frequently cleaned, green-pruned and selectively thinned. Chemical treatments are kept to a minimum. The grapes are hand-picked in September and October.
ORGANOLEPTIC CHARACTERISTICS
In the glass this still, intensely straw-yellow coloured wine has refined fruit, floral and mineral notes, notably almond, linden and flint, depending on the particular stage of evolution.
On the palate, it is subtle, elegant and refined.
Crisp and tasty, it has a balanced and lingering finish.
PAIRINGS
Excellent as an aperitif or with first or second courses of fish, shellfish, white meat, soused dishes, delicate charcuterie (lard, sweet prosciutto, cooked salami), fresh or lightly-aged soft and string cheeses.
TEMPERATURE AND STORAGE
Store away from light in a cool, damp place at around 15°C.
