VINIFICATION
The finest Colli Tortonesi grapes from our vineyards are selected when optimally ripe and brought to our cellar. They are destemmed and cold-macerated on their skins for two or three days, after which they undergo a gentle pressing.
The resulting free-run must undergoes fermentation in steel tanks with regular lees stirring for about ten months
TRAINING SYSTEM
Guyot. This low-yield per hectare vineyard is frequently cleaned, green-pruned and selectively thinned. Chemical treatments are kept to a minimum. The grapes are hand-picked in September.
ORGANOLEPTIC CHARACTERISTICS
This still white wine is an intense yellow with greenish highlights; its refined nose is both fruity and floral, particularly with notes of acacia flower, peach and pear. The palate is finely balanced with a long finish. Crisp and tasty, with good acidity.
After 2-3 years of bottle-ageing, added mineral notes further enrich the wine.
PAIRINGS
Excellent with beef tartare, charcuterie and cheese, cold as well as hot starters, first courses and white meat.
